Honey Lemon Mint Chia Drink Recipe

A simple morning pick-me-up drink and also a popular dinner party drink that is refreshing and easy to prepare.

Ingredients (makes 1 litre) 

40g organic chia seeds (6 – 7 teaspoons)
125g organic honey (8 – 9 tablespoons)
850ml water
28ml freshly squeezed lemon juice (~1/2 lemon)
4 sprigs of mint (~15 mint leaves)

Instructions

  1. Mix organic chia seeds with water, let rest for 5 minutes (or if possible, soak overnight in fridge)
  2. Add organic honey to mixture and blend well
  3. Bruise (rub) mint leaves and mix in with lemon juice
  4. Serve chilled
