Fuss-free Quinoa Salad
Designed to be eaten warm or chilled, this quick Organic Quinoa salad is delicious, nutritious, convenient and easy to prepare.
Ingredients (Serves 2)
- 1/2 cup of organic quinoa
- 1 cup of water
- 50g cherry tomatoes, halved
- 1 apple, diced
- 1/2 cucumber, diced
- 5g parsley, chopped
- 2 tablespoon chia seed oil / olive oil
- 2 tablespoon white wine vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Add raw organic quinoa, water, salt into a small pot over medium heat and allow it to boil
- Lower heat to low, cover with a lid and allow contents to simmer for 10 minutes
- Turn off heat and allow contents to steam-cook for an additional 10 minutes
- Fluff cooked quinoa with a fork
- In a separate bowl, whisk honey, vinegar and chia seed oil together to make the dressing
- Combine cooked quinoa with other ingredients in a mixing bowl and serve. Add dressing, salt and pepper to taste
